I love the fall, but I’m just gonna say it… I am not a fan of everything pumpkin. Don’t hate me. If you love pumpkin items, go visit Trader Joe’s. Mexican Potato Tacos (Tacos de Papa)

 This is one of my favorite meals of all time. Of all time!

Tacos dorados de papa AKA fried potato tacos. These are crispy tacos filled with creamy potatoes and topped with lots of yummy veggies, cheese and salsa.

 My mom would make these tacos all the time while I was growing up (she still does) and now I make them too. Most of the time she would make them with a combination of shredded beef and potatoes. I always liked mine with only potato, so she would make them for me that way. Feel free to add cooked shredded beef, ground beef or ground turkey to your potato filling.

A couple of weeks ago my husband and I were walking around an outdoor market in Mexico, and I spotted these beautiful clay dishes. I was in love. Like, I needed to have them. I instantly pictured making tacos and serving them on these plates. When you make potato tacos the best part is having a variety of toppings, and I loved the little 3 compartment dish for that. Apple Picking in Oak Glen, California

  Today felt like a real fall day in Southern California.

Not only was the weather NOT in the 90’s finally, but I also went apple picking for the first time with my family. We visited Los Rios Rancho in Oak Glen and dived right into all things apple and all things fall. I mean, I even got to wear my favorite boots, so you know it was a good day.

Tofu Lettuce Wraps

If you have never cooked tofu, this is the recipe for you. And if you love cooking tofu, this is also the recipe for you! This dish is packed with flavor. Salty soy sauce, garlic, sesame and a little sweetness all wrapped up in crunchy romaine leaves. This is a fun dish to make and a great way to use left over veggies.

The texture of this tofu is awesome! With just a few of simple steps the tofu develops crispy edges and soaks up the sauce. If you think you don’t like tofu, please try it this way. These lettuce wraps are healthy and super satisfying. They even keep  my steak loving husband wanting more.  I mean, I rest my case.

Baja California, Mexico (sneak peek)

DSCN0983This weekend my husband and I took a spontaneous trip to Baja California, Mexico with his parents and some friends of theirs. We stayed in Puerto Nuevo and visited the Ruta del Vino (Wine Route) in El Valle De Guadalupe. Mexico is so beautiful and has so much to offer. It was a wonderful weekend, and I took a million photos. Here are a couple for now, but I will post about the trip in more detail as soon as I can! Take in the beauty that is Mexico.

Trader Joe’s Inspired Panini

This panini is like a, “HOLD THE PHONE,” crazy good, crispy, melty, flavor explosion, “WHY HAVE I NEVER MADE THIS SANDWICH BEFORE?” My sentence can be as long as I want. DELICIOUS!

When you bite into this panini you get a big buttery crunch from the outside.  Then on the inside, you have hot melted cheese, warm oven roasted turkey, bright herb flavor from the pesto, juicy plump cherry tomatoes and the fresh green bite of the spinach. Lemon & Smoked Paprika Swordfish Skewers with Quinoa

I think the sign of a good dish is when your husband risks the tips of his fingers to pull little pieces of left behind fish from a hot grill pan! Not saying that my husband did that or anything. Wink Wink. This swordfish is bursting with smokiness and lemon flavor. It is beautifully skewered with cherry tomatoes and covered with grill marks.

Super Sweet Green Smoothie

I am obsessed with this smoothie. It tastes like sweet vanilla goodness… I am not kidding! It doesn’t have a “green” flavor despite the bright green color and only uses 3 ingredients. It is smooth and makes me feel happy and healthy when I drink it.
