shrimp-nachos-42Nachos are one of my favorite dishes to order when we go out! I love all the cheese and toppings, but usually I don’t see nachos with shrimp on the menu. These shrimp nachos with easy pan roasted jalapeños and corn  and tons of guacamole are just the best thing ever to me right now!

Tofu Lettuce Wraps

If you have never cooked tofu, this is the recipe for you. And if you love cooking tofu, this is also the recipe for you! This dish is packed with flavor. Salty soy sauce, garlic, sesame and a little sweetness all wrapped up in crunchy romaine leaves. This is a fun dish to make and a great way to use left over veggies.

The texture of this tofu is awesome! With just a few of simple steps the tofu develops crispy edges and soaks up the sauce. If you think you don’t like tofu, please try it this way. These lettuce wraps are healthy and super satisfying. They even keep  my steak loving husband wanting more.  I mean, I rest my case.

Super Sweet Green Smoothie

I am obsessed with this smoothie. It tastes like sweet vanilla goodness… I am not kidding! It doesn’t have a “green” flavor despite the bright green color and only uses 3 ingredients. It is smooth and makes me feel happy and healthy when I drink it.

Spicy Sriracha Soy Edamame

Have I mentioned that I love spicy food? I have a problem. Most food is just not complete for me without some spiciness. Sriracha Hot Chili Sauce is one of my favorite hot sauces, and I try to add it to everything!

My husband on the other hand, is not a fan of spicy food at all! But I ignore his disapproving looks and add my hot sauce anyway. For some reason though, he does like Sriracha sauce sometimes… in small amounts that is. Sriracha is just so flavorful. You get a little bit of garlic, a little sweetness, and a whole lot of heat. Edamame AKA soybeans are fun to eat, and they are a good source of protein. Grilled Mexican Street Corn

I love Corn! I grew up loving Mexican street corn, you know, the kind that’s sold out of a little cart, or van, or at a random park. That’s totally normal for everyone right?! Well, maybe it’s not normal for everyone, but where I grew up in Southern California it is.

I’m talking about delicious, buttery, mayo-ee, cheesy corn. This is how I make it at home, and let me tell you… It’s delicious! I keep it true to the original Mexican flavors I love so much, but give it my own twist by grilling the corn and making a chili lime mayo that is spread all over the warm corn and melts right into all the little nooks.
